ZUCCHINI MEATBALLS

Ingredients

 

1 zucchini around ½ kg

1 medium onion

1 clove of garlic

1 small bunch of fennel

1 small bunch of mint

1 egg

1 small bunch of parsley

Salt

Pepper

2 tablespoons of fine semolina

 

Directions

Grate the zucchini on a grater and squeeze it well to remove the liquid. Add the herbs, semolina, egg, salt and pepper and mix well to combine.Make them into balls, flour them and fry them in hot oil.
